Peanut Butter Bon Bons
These Peanut Butter Bon Bons are an easy holiday treat featuring a creamy peanut butter filling, crunchy Rice Krispie cereal, and a delicious coating of semi-sweet chocolate and rich butterscotch.
Prep Time 30 minutes mins
Cooling Time 15 minutes mins
Total Time 45 minutes mins
- 2 cups (512 g) peanut butter, I like creamy Skippy
- ½ cup (113.5 g) butter
- 4 ½ (540 g) cups powdered sugar, sifted
- 3 cups (80 g) crisp rice cereal
- 1 cup (224 g) butterscotch chips (I like using Nestle.)
- 1 cup (224 g) semi-sweet chocolate chips
In a large bowl, combine powdered sugar and cereal. Set aside.
In a small saucepan, melt peanut butter and butter.
Once melted, pour over the cereal mixture and stir. Once it’s cooled a bit, use your hands to blend.
Form into 1 inch balls and chill until firm.
Once balls are firm, melt butterscotch chips in a microwave safe bowl. I microwave in 30 second intervals. You can also use a double broiler if you’d like.
Dip half the candy in melted butterscotch. Swirl with the back of a small spoon. Place on a baking sheet lined with wax paper.
Melt chocolate chips in a microwave safe bowl and dip the other half of the candy in melted chocolate. Swirl with the back of a small spoon. Place on a baking sheet lined with wax paper. Chill until chocolates are firm.
Enjoy!
Notes
- These candies freeze well, so you can make them ahead of time.
