Why You’ll Love These White Chocolate Raspberry Cookies
- Soft and chewy: These cookies are packed with brown sugar and slightly underbaked to give them the perfect soft and chewy texture.
- Less mess: Using freeze-dried raspberries instead of fresh or frozen raspberries keeps the dough much less messy.
- Sweet and tart: Creamy white chocolate and tart raspberries balance each other perfectly.
- Perfect any time of year: These cookies are delicious year-round, and the raspberries make them especially festive for Valentine’s Day and Christmas.
What You’ll Need to Make White Chocolate Raspberry Cookies
- Unsalted butter: I always use unsalted butter so I can control the amount of salt in the recipe.
- Granulated sugar: Helps give the edges a slight crisp.
- Brown sugar: More brown sugar helps keep these cookies soft and chewy.
- Eggs: Help bind the ingredients together and give the cookies structure.
- Vanilla: Adds a little extra flavor to the cookies.
- All-purpose flour: Always measure flour by weight or use the spoon-and-level method for the most accurate measurement.
- Salt: Enhances the flavors of the cookies.
- Baking soda: Helps the cookies spread and brown.
- Baking powder: Gives the cookies a little extra lift.
- Cornstarch: Helps create a soft, tender cookie.
- White chocolate chips: Add creamy sweetness that pairs perfectly with the tart raspberries.
- Freeze-dried raspberries: Freeze-dried raspberries work best in this recipe. Fresh and frozen raspberries contain more moisture and can cause the dough to turn blue or purple. There is a chemical reaction between the raspberry juice and baking soda, so make sure to use freeze-dried raspberries. I can always find them at Target.

Tips for the Best White Chocolate Raspberry Cookies
- Don’t overmix the dough. Once the dry ingredients are incorporated, stop mixing.
- Use freeze-dried raspberries. They give you the raspberry flavor without adding extra moisture to the dough.
- Fold in the raspberries gently. This helps keep them from crumbling too much and turning the dough pink.
- Slightly underbake the cookies. They may look a little soft when you take them out of the oven, but they will continue to set as they cool.
- Let the cookies cool on the baking sheet. Allow them to cool for 5–10 minutes before transferring them to a wire cooling rack.
