Easy, No-Bake Chocolate Chow Mein Cookie Candies

Nothing says the holidays like a homemade candy with creamy chocolate, butterscotch coated chow mein noodles with crunchy peanuts and sweet marshmallows. These Easy, No-Bake Chocolate Chow Mein Cookie Candies are unique, easy, and delicious. 

My mom has been making these no bake chow mein candies for years and they are my favorite holiday treat. The salt, sweet, and crunch are just delicious. The best part is that they are easy to make and they freeze well.

Ingredients Needed to Make Easy, No Bake Chow Mein Candies

  • Chow mein noodles
  • Semi-sweet chocolate chips
  • Butterscotch chips
  • Peanuts
  • Mini marshmallows

How to Make Easy, No Bake Chow Mein Candies

  • Line two baking sheets with wax paper and set aside. You can also lay the wax paper right on your counter. 
  • In a large mixing bowl, combine the chow mein noodles and peanuts with a large serving spoon or rubber spatula.  
  • In a microwave safe bowl, melt the chocolate chips. I like to start with 30 seconds and stir, then heat them for another 20 seconds and stir. Chocolate chips keep their shape when they are melted, so be sure to stir after heating to determine if you need to continue heating the chocolate. 
  • Once smooth, set aside and melt the butterscotch chips just as you did the chocolate chips. Once smooth, combine melted butterscotch and melted chocolate. Stir until well combined.
    • You can melt the chips together in the microwave or in a small saucepan, but butterscotch chips can be tricky, so I prefer to melt them separately then combine them once both candies are melted. 
  • Add melted chocolate mixture to chow mein noodles and peanuts. Stir until all noodles are coated. 
  • Add marshmallows and stir until marshmallows are coated. Adding the marshmallows last will help prevent them from melting. 
  • Spoon out tablespoons of mixture onto wax paper and allow to cool. 
  • Store in an airtight container for up to two weeks. These freeze great as well!

  • 1 12 oz bag (340 g) chow mein noodles
  • ½ cup (56 g) peanuts
  • 1 12 oz bag semi-sweet chocolate chips
  • 1 12 oz bag butterscotch chips
  • 1 cup (45 g) mini marshmallows

Instructions
 

  • Line two baking sheets with wax paper and set aside. (You can also put wax paper on the counter, but candies will have to set on the wax paper before moving.)
  • In a large mixing bowl, combine chow mein noodles and peanuts. Mix until combined.
  • In a microwave safe bowl, melt chocolate chips. Start with 30 seconds, stir and heat another 20 seconds. Continue to heat until smooth. Set aside. In another microwave safe bowl, melt butterscotch chips just as the chocolate chips.
  • Combine melted chips together until smooth.
  • You can melt chips together in a small saucepan but melting butterscotch can be tricky. Stir continuously until smooth.
  • Pour melted chocolate mixture over chow mein noodle mixture and stir until coated.
  • Pour mini marshmallows in mixture and stir until coated.
  • Adding the mini marshmallows after the chocolate will help prevent them from melting too much.
  • Spoon out tablespoons of mixture and place on wax paper. Allow to cool and enjoy!
